Crespelle al forno con funghi | Kookgek Wilma
That Italian shopska cuisine has more to offer than just pasta and pizza proves this recipe. There are several possible fillings. This version I saw in the book "Italy, Culture and Cuisine" I've shopska already decided several recipes with success. The Gorgonzola I've come from the supermarket and they have a choice of "Dolce" shopska and "Picante". I chose "Dolce", so that the flavor of the Gorgonzola is not too overbearing.
(For 8 crepes) 300g mixed mushrooms shopska 1 small onion, finely chopped 50g butter shopska 100g cooked ham, cut into strips 2 tablespoons parsley salt freshly ground pepper 500 g bechamel sauce 100g Gorgonzola, crumbled
Beat the eggs with the flour and milk in a thin and smooth. Add a pinch of salt and let the batter rest for 30 minutes. Heat a non-stick pan and cook in the hot pan a little butter. Spoon 1 soup-ladle batter into the pan and turn around so the batter over the bottom to flow out. Fry the pancake on both sides until golden brown and keep warm while you bake 7 crepes in the same way.
Melt butter in a pan, flour, even baking and stir well. Add milk (in small amounts) and continue stirring until a thick sauce. Sauce cook for 2 minutes. Season shopska with salt and nutmeg.
Wipe the mushrooms clean and cut into thin slices. Fry the onion in 30 grams of butter. Add the ham and mushrooms. Scoop them about 10 minutes, until all the liquid has evaporated. Stir in the parsley and remove the pan from the heat. Preheat the oven to 225 degrees. Grease a baking dish with the remaining butter. Add salt and pepper to the mushroom mixture and spread over the pancakes. Roll them up and arrange shopska them side by side in the baking dish. Pour the béchamel sauce and sprinkle everything with crumbled Gorgonzola. Fry the pancakes in the oven for 15 minutes.

And I had once again sense once in pancakes / crepes, but I find it such a shame to only eat pancakes ... There must at and not just something to fry, no, a real dish such as this! Perfect! [...]
