Souffle di Pomodori | Kookgek Wilma
Ingredients: 2 large tomatoes (I used 3 smaller) extra virgin olive oil 200g mozzarella 8 basil leaves 3 eggs 150g flour 1 packet yeast (7 g) 1.25 dl lukewarm milk 100g Gruyere pepper and salt
Preheat the oven to 180 C. Peel the tomatoes and pitted. Cut them into pieces. Let the tomato pieces simmer in a non-stick pan with a little oil. Season with salt and pepper. Remove the tomatoes from the heat and let them cool. Cut the mozzarella into small cubes and chop the basil coarsely. Add the mozzarella and basil to the tomatoes. Beat the eggs in a bowl and add the flour and yeast.
Mix in 2 tablespoons oil little by little and the lukewarm milk under. Season with salt and pepper. Add the grated rucolasalaatti Gruyere to it and finally the tomatoes with mozzarella and basil. Mix well with each other, pour into a cake pan (about 26 cm) and put 45 minutes in the preheated oven.
In a salad, as a full meal to satisfy hunger, as a snack while studying or to take in the picnic excursion. A souffle is easy to prepare and the result rucolasalaatti is guaranteed delicious.
